32 Months


The other day while driving you asked for a snack. You knew that I had one for you because you saw me pack it. You asked very nicely and I said, "No, I don't think we are going to have a snack right now". Laughing you replied, "You has hilarious, Mommy." lol.

Today, we were with Grandma Dana. As you were telling her goodbye, you patted her face and said "have a good day".

Seriously, some of the things you say crack me up.... and some don't. =)

When Daddy and I get irritated with you and raise our voices, you said "Be patient Mommy (or Daddy)". I love how you don't take inconsideration that you are the reason that we are frustrated.

Happy 32 months!

Food Coloring Painting


This was another activity via Pinterest via Indulgy. It was a huge hit. Like an almost two hour hit (which is totally amazing for a 2 year old)! All I did was put baking soda in the bottom of the pan and made a few different containers of food coloring. I forgot to mix the food coloring with vinegar (so that it fizzes), but that will be something "extra" for next time we do this.



We prolonged the activity by decorating with sprinkles that we had. He loved it. He even made pancakes out of the sprinkle mess. =)

Caramelized Grapefruit


I can't remember where I saw this "recipe". I laugh about the recipe part of it, because all you do is stick it under the broiler for 5 min with 2 T of brown sugar on top. It definitely tames down the tartness. I like grapefruit by itself, but I thought this might help Greyson like it better. He ate it, but I don't think it will be a favorite anytime soon.

Moon Dough

 I've still been doing one activity a week off of Pinterest. For the most part, they have been a huge hit. This one was great as well. I mixed flour with baby oil and that was it. I halved the recipe because I thought 8 cups of flour would be overkill. We played with it a few days in a row and just threw it out. It ended up being pretty messy, but it was quick to clean up.

Silver Dollar

On Saturday, I called Stacey mid-morning to see if they wanted to head to Silver Dollar City. I am so not a late notice type of person, but it was just how the day was going. Stacey, Cody and Katelyn were already packed up in the car at a gas station getting ready to head to Stockton Lake. So, what did they do? Oh, they just headed back home...relaxed for two hours (while Greyson had his nap) and packed up and went with us. I so wish I could be more laid back about things, but that is never going to happen. I can just be thankful that I have a best friend that I get to live vicariously through. =)

We had fun. It was Katelyn's first time there and I was hoping she would love it. She definitely did.

Black Bean Soup


This soup is so easy and delicious. I think I made it twice last week. =)

Black Bean Soup - Adapted from Healthy Recipes

Ingredients:
1 T olive oil
1/4 onion, chopped
3 cloves garlic
1 jalapeño (I used 3/4 without seeds)
1/2 tsp cumin
1 can black beans
2 C chicken stock
lime juice, to taste (I used 1 whole lime)
1/4 C Sour cream
2 T chopped cilantro

Directions:
1. Heat a large pot over medium heat.
2. Add oil, heat. Add onion, cook for about 2-3 min.
3. Add garlic, jalapeño and cumin and cook for about 1 min.
4. Add beans, chicken stock and sour cream. Bring to a simmer.
5. Simmer for 5 min and then use an immersion blender.
6. Puree the soup. Season with salt, pepper and lime juice. Top with cilantro. Serve!

Summersville

Greyson and I took a small two day trip to Summersville this past week. We went to visit Amber and her little guy, Harper. We had a great time. Greyson got to feed horses, take walks outside, swim/play in the river, and swim at a pool. He loved it. 

We came away with memories (hitting a deer and seeing a snake in the river) which is one of my favorite things about any trip. 

The past few days, Greyson has asked if we are headed to Amber's house every time we are on a country road. =) Does that tell you anything?
